Veggie Strata
I LOVE strata! So yummy, and so many ways you can make it! With four kiddos in the house the food preferences can vary widely. I'm quite fond of recipes that allow me to switch it up each time I make it.
So here's my take on a veggie strata. I don't use exact measurements when cooking this so please bear with me. The best part is you can add whatever veggies YOU like :)
VEGGIE STRATA
• bread, I used whole wheat, but by all means throw down whatever it is you like
• eggs
• half and half, or milk
• salt
• hot sauce
• veggies, whatever you're into, I used tomato, zucchini, and a little bit of onion
• cheese, I used cheddar, but once again use whatever you like
Preheat oven to 350°. Grease a baking dish and layer the bottom of you dish with your bread.
In a separate bowl, whisk up your eggs {I used about a dozen} with your half and half {just a bit, depending on how many eggs you use}, a little bit of salt, and a dash or two of hot sauce {depending on how much you like}. Add in your veggies.
Pour this over the bread in the pan. I let it sit for 10 to 15 minutes to absorb into the bread. Top with cheese, and bake in oven until done!
You can also make this ahead of time, instead of baking just cover and place in the fridge. The next morning get up and pop it in the oven.

Huckleberry Coffee Cake
Sam came home the other day and surprised me with huckleberries he had found while out in the woods. So of course that led the kids and I to find something yummy to do with them. After looking through many a recipe, we settled on a blueberry coffee cake recipe, which of course we switched up the blueberries for huckleberries.
Blueberry {or huckleberry :)} Coffee Cake
3/4 cup sugar
1/4 cup shortening
1 egg
1/2 cup milk
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2 cups blueberries, or huckleberries
topping:
1/2 cup sugar
1/3 cup flour
1/2 cinnamon
1/4 soft butter
Preheat oven to 375°. Grease and flour a 9 inch square pan. Mix sugar, shortening, and egg thoroughly. Stir in milk, then stir in the flour, baking powder and salt. Fold in the blueberries. Pour into pan. Sprinkle on topping. Bake for 45 to 50 minutes.
This is a delicious recipe I have used many times using blueberries or huckleberries. If you have access to huckleberries, by either picking yourself or picking some up at your local farmer's market, I highly suggest using them. If not blueberries are very yummy in this recipe.

Weekly Photo Challenge
I'm always looking for ways to improve my photography. I think photography has neverending possibilites for learning. There is always something new and fun to try and accomplish.
I joined a weekly photo challenge group. There is a new topic every week that gets me out and clicking away. Searching for something to challenge myself with.
This last week our challenge was to capture something from below looking up. So here's the best of what I got.

I'm loving the weekly challenge. It is such a great way to expand your photography skills. It's not really hard to find a group either. Search one out on facebook, your favorite photography forum or just start one with some friendly photogs you may know. You'll be glad you took the effort to do so.

Kid's Fall Pictures!
The first snow has fallen. I love it, all glittery and white. So pretty. Unfortunately it has almost all melted away, leaving soggy leftover leaves that never made it into the jumping pile.
I was able though to get some pretty good pics of the kiddos in the leaves.
My lovely Tailer. Not a big fan of the camera lately, she says it's too big and she liked my little one better. She is so gorgeous!
